What to do with the leftover turkey carcass…

Boiling your turkey carcass to make a delicious second day turkey soup or stew is hardly a new thing. The main purpose of this entry is to emphasize that this is an easy process… and so much more satisfying that throwing the remainders of the celebratory bird away.

INSTRUCTIONS

1) Pick off as much of the remaining turkey meet as possible. Make turkey chow-mein, salad, or other delicious meal.

2) When the turkey is picked almost clean, put remaining carcass and six cups of water in to a stock pot.

3) Add several stalks of chopped celery, an onion, carrots and bay leaves.

4) Bring mixture to a boil, turn down heat and simmer on low flame/ setting for 3-4 hours.

5) Once the remaining meat has been boiled off the bone, strain out all solids from broth, setting aside any delicious morsels of meat that remain for re-integration into the soup later on.

6) Put soup in refrigerator over night. In the morning, remove fatty solids from the top and dispose.

7) Now you have a delicious soup stock! To make soup, add leftover meat, starch product of your choice(rice, orzo, noodles), vegetables, and viola! delicousness…

    A carcass soup recipe

    The picture of the carcass is butt ugly and doesn’t do justice to the carcass.
    After carving on Thanksgiving, the carcass is pure juicy drippings of buttery fat, skin and dangling meat morsels…..yummy….

    So get it in the pot that moment with water (and buttery fat and skin and dangling meat morsels), boil and then simmer. After tossing out the last bottle of wine, but draining any remaining white wine to the broth, or the Friday after, stick in ice box.

    Saturday, pull out and skim fat, skin and morsels at top. Chop finely and add ice box veggies (mine were green onions, celery, carrots, cilantro) in moderate amounts, wine if it wasn’t emptied on Thxgiving (again moderate), boil, simmer for hours and back to the ice box.

    Eating day add can of drained white kidney beans, frozen spinach and beans and no more than a cup and half of your favorite pasta-thicker noodles preferably. (If thicker ain’t your preference, then make it thicker).
    When the pasta is done you are ready to eat.

    Dinner on Monday, Tuesday (add water) and Wednesday (retract water) and then no more Turkey till next thanksgiving.
